Aioli, in its traditional form, is typically gluten-free as it’s made primarily from garlic, olive oil, and sometimes egg yolk. However, it’s always important to check the specific ingredients or ask about preparation methods when dining out, as some variations or commercial products might include additives or thickeners that contain gluten.

Rich in antioxidants: Garlic, the main ingredient in aioli, is high in antioxidants that can help protect cells from damage caused by free radicals.
Immune system support: Garlic contains compounds that may boost immune function and help fight off infections.
Heart health: Garlic has been linked to improved cardiovascular health, potentially lowering blood pressure and cholesterol levels.
Anti-inflammatory properties: Garlic has natural anti-inflammatory effects that may help reduce inflammation in the body.
Antibacterial and antifungal properties: Garlic has natural antimicrobial properties that can help fight harmful bacteria and fungi.
Healthy fats: If made with olive oil, aioli contains heart-healthy monounsaturated fats.
Vitamin E: Olive oil in aioli is a good source of vitamin E, an antioxidant that supports skin health and immune function.
Potential cancer-fighting properties: Some studies suggest that compounds in garlic may have cancer-fighting properties.
Digestive health: Garlic may support gut health by promoting the growth of beneficial gut bacteria.
Nutrient absorption: The fat content in aioli can help with the absorption of fat-soluble vitamins from other foods.Remember that aioli is typically high in calories and should be consumed in moderation as part of a balanced diet.
Individuals with egg allergies (as traditional aioli contains raw egg yolks)
People with severe garlic allergies or intolerances
Those on a low-fat diet (aioli is high in fat content)
Individuals with compromised immune systems (due to the risk of salmonella from raw eggs in traditional recipes)
Pregnant women (due to the risk of salmonella from raw eggs in traditional recipes)
People with high cholesterol concerns (due to the high fat content)
Those following a vegan diet (unless it’s a vegan version of aioli)
Individuals with specific dietary restrictions that prohibit garlic or olive oil
People with sulfite sensitivities (as garlic contains natural sulfites)
Those following a strict low-calorie diet (aioli is calorie-dense)
Individuals with digestive issues that are triggered by high-fat foodsRemember that some of these concerns can be mitigated by using pasteurized eggs or egg substitutes, or by choosing vegan alternatives to traditional aioli.

A new Approach for People with Gluten Sensitivity:
Explore the Science and Benefits of Tolerase® G.
Relief from Gluten Sensitivity
In the fight against gluten, there is a unique supplement that stands out: Little Helpers anti-gluten pills with 100% Tolerase® G.
This specific enzyme, Tolerase® G, a patented endopeptidase specific for proline, was developed by Royal DSM and has been scientifically proven to be effective in breaking down gluten residues ( 1) . Furthermore, research has shown that Aspergillus niger prolyl endoprotease (AN-PEP), an enzyme closely related to Tolerase® G, can break down gluten so effectively that it barely reaches the duodenum, potentially eliminating gluten toxicity ( 2) ( 3 ) .
On this page we explain why we are so enthusiastic about this supplement, supported by scientific research.

What is Gluten?
Gluten is a group of proteins found primarily in grains such as wheat, barley, and rye. These complex proteins give shape, strength, and texture to bread and other grain products. However, gluten is difficult to digest because it is rich in proline, a non-essential amino acid. This is why about 13% of the world’s population is sensitive to gluten in their diet (1).
How Tolerase® G Works
It is important to note that Tolerase G is designed to have optimal activity in the difficult conditions of the stomach. Its effectiveness on the digestion of gluten in the stomach and duodenum has been scientifically proven ( 1 ).
Studies have shown that a newly identified prolyl endoprotease derived from Aspergillus niger can effectively break down gluten proteins. This enzyme works optimally at a pH of 4–5, remains stable at pH 2, and is completely resistant to digestion by pepsin ( 2 ). Furthermore, research has shown that Aspergillus niger prolyl endoprotease (AN-PEP) accelerates the breakdown of gluten in the stomach so much that very little gluten reaches the duodenum ( 3 ). This suggests that co-administration of AN-PEP with a meal containing gluten could potentially eliminate gluten toxicity, allowing people to (occasionally) abandon their strict gluten-free diet ( 3 ).
