What is Tolerase® G?

A new Approach for People with Gluten Sensitivity:
Explore the Science and Benefits of Tolerase® G.

Relief from Gluten Sensitivity

In the fight against gluten, there is a unique supplement that stands out: Little Helpers anti-gluten pills with 100% Tolerase® G.

This specific enzyme, Tolerase® G, a patented endopeptidase specific for proline, was developed by  Royal DSM  and has been scientifically proven to be effective in breaking down gluten residues ( 1) . Furthermore, research has shown that Aspergillus niger prolyl endoprotease (AN-PEP), an enzyme closely related to Tolerase® G, can break down gluten so effectively that it barely reaches the duodenum, potentially eliminating gluten toxicity ( 2) ( 3 ) .

On this page we explain why we are so enthusiastic about this supplement, supported by scientific research.

What is Gluten?

Gluten is a group of proteins found primarily in grains such as wheat, barley, and rye. These complex proteins give shape, strength, and texture to bread and other grain products. However, gluten is difficult to digest because it is rich in proline, a non-essential amino acid. This is why about 13% of the world’s population is sensitive to gluten in their diet (1).

How Tolerase® G Works

It is important to note that Tolerase G is designed to have optimal activity in the difficult conditions of the stomach. Its effectiveness on the digestion of gluten in the stomach and duodenum has been scientifically proven ( 1 ).

Studies have shown that a newly identified prolyl endoprotease derived from Aspergillus niger can effectively break down gluten proteins. This enzyme works optimally at a pH of 4–5, remains stable at pH 2, and is completely resistant to digestion by pepsin ( 2 ). Furthermore, research has shown that Aspergillus niger prolyl endoprotease (AN-PEP) accelerates the breakdown of gluten in the stomach so much that very little gluten reaches the duodenum ( 3 ). This suggests that co-administration of AN-PEP with a meal containing gluten could potentially eliminate gluten toxicity, allowing people to (occasionally) abandon their strict gluten-free diet ( 3 ).

Sourdough Starter: A fermented mixture of flour and water containing wild yeast and bacteria. It's used to leaven bread and provides a tangy flavor. Gluten-free versions can be made using rice flour or other gluten-free flours.
Baking Powder: A chemical leavening agent that consists of a combination of baking soda, cream of tartar, and sometimes cornstarch. It creates carbon dioxide bubbles in baked goods, causing them to rise.
Egg Whites: When whipped, egg whites can act as a natural leavening agent in recipes. They add structure and help create a light, airy texture in gluten-free baked goods.
Carbonated Water: Can be used as a leavening agent in some recipes, particularly for lighter batters. The carbonation helps create bubbles and lift in the final product.
Xanthan Gum: While not a direct substitute for yeast, it's often used in gluten-free baking to improve texture and provide structure. It helps mimic the elasticity that gluten typically provides in traditional baked goods.

Frequently
Asked Questions

Can celiacs eat yeast?
Yes, celiacs can generally eat yeast. Yeast is naturally gluten-free and does not contain wheat, barley, or rye proteins that are harmful to those with celiac disease. However, it's important to ensure that the yeast product is pure and hasn't been contaminated with gluten during processing. Always check labels carefully and choose products specifically labeled as gluten-free to be safe.
What yeast is not gluten-free?
Brewer's yeast is typically not gluten-free. This is because it's often a byproduct of beer brewing, which uses gluten-containing grains. Nutritional yeast, on the other hand, is usually gluten-free. It's important for those with gluten sensitivities to check labels carefully and choose yeast products specifically labeled as gluten-free.
Does Baker's yeast extract have gluten?
Baker's yeast extract itself does not naturally contain gluten. However, some commercial yeast extracts may be contaminated with gluten during processing or have gluten-containing additives. For those with celiac disease or gluten sensitivity, it's best to look for products specifically labeled as gluten-free. Always check the ingredient list and manufacturing information if you have concerns about gluten content.
Which yeast brand is gluten-free?
Gluten-free yeast options are available from several brands. Red Star, Fleischmann's, and SAF are popular brands that offer certified gluten-free yeast products. It's important to check the packaging carefully, as not all yeast from these brands is necessarily gluten-free. Always look for specific gluten-free labeling to ensure the product meets your dietary needs.
