Is Chicken Piccata Gluten Free?

Is Chicken Piccata Gluten Free?

Traditional Chicken Piccata is not gluten-free as it typically uses wheat flour to coat the chicken before pan-frying. However, gluten-free versions can be made by substituting the wheat flour with alternatives like almond flour, rice flour, or gluten-free all-purpose flour blends.

What is Tolerase® G?

A new Approach for People with Gluten Sensitivity:
Explore the Science and Benefits of Tolerase® G.

Relief from Gluten Sensitivity

In the fight against gluten, there is a unique supplement that stands out: Little Helpers anti-gluten pills with 100% Tolerase® G.

This specific enzyme, Tolerase® G, a patented endopeptidase specific for proline, was developed by  Royal DSM  and has been scientifically proven to be effective in breaking down gluten residues ( 1) . Furthermore, research has shown that Aspergillus niger prolyl endoprotease (AN-PEP), an enzyme closely related to Tolerase® G, can break down gluten so effectively that it barely reaches the duodenum, potentially eliminating gluten toxicity ( 2) ( 3 ) .

On this page we explain why we are so enthusiastic about this supplement, supported by scientific research.

What is Gluten?

Gluten is a group of proteins found primarily in grains such as wheat, barley, and rye. These complex proteins give shape, strength, and texture to bread and other grain products. However, gluten is difficult to digest because it is rich in proline, a non-essential amino acid. This is why about 13% of the world’s population is sensitive to gluten in their diet (1).

How Tolerase® G Works

It is important to note that Tolerase G is designed to have optimal activity in the difficult conditions of the stomach. Its effectiveness on the digestion of gluten in the stomach and duodenum has been scientifically proven ( 1 ).

Studies have shown that a newly identified prolyl endoprotease derived from Aspergillus niger can effectively break down gluten proteins. This enzyme works optimally at a pH of 4–5, remains stable at pH 2, and is completely resistant to digestion by pepsin ( 2 ). Furthermore, research has shown that Aspergillus niger prolyl endoprotease (AN-PEP) accelerates the breakdown of gluten in the stomach so much that very little gluten reaches the duodenum ( 3 ). This suggests that co-administration of AN-PEP with a meal containing gluten could potentially eliminate gluten toxicity, allowing people to (occasionally) abandon their strict gluten-free diet ( 3 ).

Gluten Free Alternatives
Gluten-free Lemon Garlic Salmon Piccata - A seafood twist on the classic dish, using salmon fillets instead of chicken. The fish is pan-seared and topped with a tangy lemon-caper sauce, offering a rich source of omega-3 fatty acids.
Gluten-free Cauliflower Piccata Steaks - A vegetarian option that replaces chicken with thick slices of roasted cauliflower. The cauliflower "steaks" are seasoned and served with the traditional lemon-butter sauce, providing a low-carb, plant-based alternative.
Zucchini Noodles Piccata - This alternative swaps pasta for spiralized zucchini noodles (zoodles). The zoodles are lightly sautéed and tossed in the piccata sauce, creating a lighter, vegetable-based version of the dish.
Gluten-free Pork Tenderloin Piccata - Using thin slices of pork tenderloin instead of chicken, this alternative offers a different protein source while maintaining the essence of the piccata preparation. The pork is tender and pairs well with the bright flavors of lemon and capers.
Gluten-free Eggplant Piccata - Breaded with gluten-free flour or almond meal, sliced eggplant is fried until crispy and then topped with the piccata sauce. This vegetarian option provides a meaty texture and absorbs the flavors of the sauce well.

Frequently
Asked Questions

What is chicken piccata sauce made of?
Chicken piccata sauce is primarily made of lemon juice, capers, and white wine. Butter is also a key ingredient, used to create a rich and silky texture. Chicken broth is often added to enhance the flavor and consistency of the sauce. Some recipes may include additional ingredients like garlic, shallots, or parsley for extra depth of flavor.
How do you know if chicken is gluten-free?
Chicken itself is naturally gluten-free. However, some chicken products may contain gluten due to additives, seasonings, or breading. To ensure chicken is gluten-free, check labels carefully for any gluten-containing ingredients. When dining out, ask about preparation methods and potential cross-contamination risks.
Why is chicken stock not gluten-free?
Chicken stock itself is naturally gluten-free. However, many commercially prepared chicken stocks contain additives or flavorings that may include gluten-containing ingredients. These can include wheat-based thickeners, modified food starch, or hydrolyzed wheat protein. It's important for those with gluten sensitivities to carefully read labels or make homemade stock to ensure it's truly gluten-free.
Are chicken breasts gluten-free?
Yes, chicken breasts are naturally gluten-free. Gluten is a protein found in wheat, barley, and rye, which are not present in plain chicken meat. However, it's important to be cautious of any marinades, seasonings, or coatings added to chicken breasts, as these may contain gluten ingredients. Always check labels and ingredient lists if purchasing pre-seasoned or processed chicken products to ensure they remain gluten-free.
