What is Tolerase® G?

A new Approach for People with Gluten Sensitivity:
Explore the Science and Benefits of Tolerase® G.

Relief from Gluten Sensitivity

In the fight against gluten, there is a unique supplement that stands out: Little Helpers anti-gluten pills with 100% Tolerase® G.

This specific enzyme, Tolerase® G, a patented endopeptidase specific for proline, was developed by  Royal DSM  and has been scientifically proven to be effective in breaking down gluten residues ( 1) . Furthermore, research has shown that Aspergillus niger prolyl endoprotease (AN-PEP), an enzyme closely related to Tolerase® G, can break down gluten so effectively that it barely reaches the duodenum, potentially eliminating gluten toxicity ( 2) ( 3 ) .

On this page we explain why we are so enthusiastic about this supplement, supported by scientific research.

What is Gluten?

Gluten is a group of proteins found primarily in grains such as wheat, barley, and rye. These complex proteins give shape, strength, and texture to bread and other grain products. However, gluten is difficult to digest because it is rich in proline, a non-essential amino acid. This is why about 13% of the world’s population is sensitive to gluten in their diet (1).

How Tolerase® G Works

It is important to note that Tolerase G is designed to have optimal activity in the difficult conditions of the stomach. Its effectiveness on the digestion of gluten in the stomach and duodenum has been scientifically proven ( 1 ).

Studies have shown that a newly identified prolyl endoprotease derived from Aspergillus niger can effectively break down gluten proteins. This enzyme works optimally at a pH of 4–5, remains stable at pH 2, and is completely resistant to digestion by pepsin ( 2 ). Furthermore, research has shown that Aspergillus niger prolyl endoprotease (AN-PEP) accelerates the breakdown of gluten in the stomach so much that very little gluten reaches the duodenum ( 3 ). This suggests that co-administration of AN-PEP with a meal containing gluten could potentially eliminate gluten toxicity, allowing people to (occasionally) abandon their strict gluten-free diet ( 3 ).

Gluten Free Alternatives
Rice Paper Crab Rolls: These fresh, light rolls use rice paper wrappers instead of wheat-based wonton wrappers. Filled with crab meat, cream cheese, and vegetables, they offer a similar flavor profile to Crab Rangoon but with a softer texture.
Cucumber Crab Bites: Hollowed-out cucumber slices serve as a crisp, refreshing vessel for the traditional Crab Rangoon filling. This low-carb option provides a cool contrast to the creamy filling.
Gluten-Free Wonton Crab Cups: Made with gluten-free flour blends, these crispy cups mimic the texture of traditional wontons. They're baked or fried and filled with the classic Crab Rangoon mixture for a close approximation of the original.
Crab-Stuffed Mushrooms: Button or cremini mushrooms are stuffed with a Crab Rangoon-inspired filling and baked. This option adds an earthy flavor to the dish while maintaining a satisfying bite.
Crab Dip with Gluten-Free Crackers: This deconstructed version features the Crab Rangoon filling served as a warm dip, accompanied by gluten-free crackers or vegetable crudités for dipping. It offers the same flavors in a more casual, shareable format.

Frequently
Asked Questions

Does crab rangoon have wheat?
Crab rangoon typically contains wheat. The outer wrapper is usually made from wonton wrappers, which are made with wheat flour. However, some recipes may use alternative flours for a gluten-free version. It's important to check the specific ingredients or ask the restaurant if you have wheat allergies or sensitivities.
Are Panda Express Rangoons gluten free?
Panda Express Crab Rangoon is not gluten-free. The wonton wrapper used to make the Rangoon typically contains wheat flour, which contains gluten. Additionally, other ingredients in the filling or cooking process may contain gluten or be subject to cross-contamination. If you have celiac disease or gluten sensitivity, it's best to avoid this menu item at Panda Express.
What is crab rangoon made of?
Crab rangoon typically consists of a mixture of crab meat (or imitation crab), cream cheese, and various seasonings. This filling is wrapped in wonton wrappers to form small parcels. The filled wontons are then deep-fried until golden and crispy. Despite its name suggesting Chinese origins, crab rangoon is actually an American creation commonly found in Chinese-American restaurants.
Why is imitation crab not gluten free?
Imitation crab is typically not gluten-free because it often contains wheat-based ingredients. The main component of imitation crab is usually surimi, a paste made from white fish that is mixed with starch, which is commonly wheat starch. Additionally, wheat-based binding agents and flavorings are frequently used in the production of imitation crab. Therefore, unless specifically labeled as gluten-free, imitation crab should be assumed to contain gluten and avoided by those with gluten sensitivities or celiac disease.
