What is Tolerase® G?

A new Approach for People with Gluten Sensitivity:
Explore the Science and Benefits of Tolerase® G.

Relief from Gluten Sensitivity

In the fight against gluten, there is a unique supplement that stands out: Little Helpers anti-gluten pills with 100% Tolerase® G.

This specific enzyme, Tolerase® G, a patented endopeptidase specific for proline, was developed by  Royal DSM  and has been scientifically proven to be effective in breaking down gluten residues ( 1) . Furthermore, research has shown that Aspergillus niger prolyl endoprotease (AN-PEP), an enzyme closely related to Tolerase® G, can break down gluten so effectively that it barely reaches the duodenum, potentially eliminating gluten toxicity ( 2) ( 3 ) .

On this page we explain why we are so enthusiastic about this supplement, supported by scientific research.

What is Gluten?

Gluten is a group of proteins found primarily in grains such as wheat, barley, and rye. These complex proteins give shape, strength, and texture to bread and other grain products. However, gluten is difficult to digest because it is rich in proline, a non-essential amino acid. This is why about 13% of the world’s population is sensitive to gluten in their diet (1).

How Tolerase® G Works

It is important to note that Tolerase G is designed to have optimal activity in the difficult conditions of the stomach. Its effectiveness on the digestion of gluten in the stomach and duodenum has been scientifically proven ( 1 ).

Studies have shown that a newly identified prolyl endoprotease derived from Aspergillus niger can effectively break down gluten proteins. This enzyme works optimally at a pH of 4–5, remains stable at pH 2, and is completely resistant to digestion by pepsin ( 2 ). Furthermore, research has shown that Aspergillus niger prolyl endoprotease (AN-PEP) accelerates the breakdown of gluten in the stomach so much that very little gluten reaches the duodenum ( 3 ). This suggests that co-administration of AN-PEP with a meal containing gluten could potentially eliminate gluten toxicity, allowing people to (occasionally) abandon their strict gluten-free diet ( 3 ).

Gluten Free Alternatives
Cornmeal Breading:A traditional Southern coating made from ground corn. It offers a crunchy texture and slightly sweet corn flavor. Cornmeal is naturally gluten-free and provides a golden-brown color when fried.
Rice Flour Batter:A light, crispy coating made from finely ground rice. It creates a delicate, thin crust that doesn't overpower the fish's flavor. Rice flour is neutral in taste and absorbs less oil than wheat-based batters.
Chickpea Flour Coating:Also known as gram or besan flour, this protein-rich alternative provides a nutty flavor and crispy texture. It's commonly used in Indian and Middle Eastern cuisines and offers additional nutritional benefits.
Potato Starch Dredge:A fine, powdery coating that creates an ultra-crispy exterior when fried. Potato starch is flavorless, allowing the fish's natural taste to shine through. It's also great for achieving a golden-brown color.

Frequently
Asked Questions

Is Louisiana chicken fry gluten-free?
Louisiana chicken fry typically contains gluten. The traditional recipe usually includes flour as a key ingredient for the coating. However, it's possible to make gluten-free versions using alternative flours or coatings. If you have gluten sensitivity, it's best to check with the specific restaurant or recipe to confirm if their Louisiana chicken fry is gluten-free.
Is Zatarain's seasoned fish fry gluten-free?
Zatarain's Seasoned Fish Fry is not gluten-free. It contains wheat flour as one of its main ingredients. This means it is unsuitable for those with celiac disease or gluten sensitivity. Individuals looking for a gluten-free alternative should consider other brands or make their own fish fry mixture using gluten-free ingredients.
Does crawfish seasoning have gluten?
Crawfish seasoning can vary in its ingredients depending on the brand or recipe. Many commercial crawfish seasonings are gluten-free, as they typically contain spices, salt, and other flavorings that don't include gluten-containing ingredients. However, some seasoning blends may include wheat-derived ingredients or have potential cross-contamination during manufacturing. If you have celiac disease or gluten sensitivity, it's best to check the label carefully or contact the manufacturer directly to confirm whether a specific crawfish seasoning is gluten-free.
Does fish batter contain gluten?
Most fish batter does contain gluten. The main ingredient in traditional fish batter is wheat flour, which contains gluten. However, some restaurants and packaged foods now offer gluten-free fish batter options.
