What is Tolerase® G?

A new Approach for People with Gluten Sensitivity:
Explore the Science and Benefits of Tolerase® G.

Relief from Gluten Sensitivity

In the fight against gluten, there is a unique supplement that stands out: Little Helpers anti-gluten pills with 100% Tolerase® G.

This specific enzyme, Tolerase® G, a patented endopeptidase specific for proline, was developed by  Royal DSM  and has been scientifically proven to be effective in breaking down gluten residues ( 1) . Furthermore, research has shown that Aspergillus niger prolyl endoprotease (AN-PEP), an enzyme closely related to Tolerase® G, can break down gluten so effectively that it barely reaches the duodenum, potentially eliminating gluten toxicity ( 2) ( 3 ) .

On this page we explain why we are so enthusiastic about this supplement, supported by scientific research.

What is Gluten?

Gluten is a group of proteins found primarily in grains such as wheat, barley, and rye. These complex proteins give shape, strength, and texture to bread and other grain products. However, gluten is difficult to digest because it is rich in proline, a non-essential amino acid. This is why about 13% of the world’s population is sensitive to gluten in their diet (1).

How Tolerase® G Works

It is important to note that Tolerase G is designed to have optimal activity in the difficult conditions of the stomach. Its effectiveness on the digestion of gluten in the stomach and duodenum has been scientifically proven ( 1 ).

Studies have shown that a newly identified prolyl endoprotease derived from Aspergillus niger can effectively break down gluten proteins. This enzyme works optimally at a pH of 4–5, remains stable at pH 2, and is completely resistant to digestion by pepsin ( 2 ). Furthermore, research has shown that Aspergillus niger prolyl endoprotease (AN-PEP) accelerates the breakdown of gluten in the stomach so much that very little gluten reaches the duodenum ( 3 ). This suggests that co-administration of AN-PEP with a meal containing gluten could potentially eliminate gluten toxicity, allowing people to (occasionally) abandon their strict gluten-free diet ( 3 ).

Gluten Free Alternatives
Lettuce Wraps: Large, sturdy lettuce leaves like iceberg or butter lettuce can be used as a fresh, crunchy, and low-carb alternative to Lumpia wrappers. They're perfect for holding both raw and cooked fillings.
Corn Tortillas: Made from corn masa, these are naturally gluten-free and can be used to create crispy, fried rolls similar to Lumpia. They offer a slightly different flavor profile but work well with various fillings.
Taro Wrappers: These are made from taro root and are popular in some Asian cuisines. They provide a unique purple color and slightly nutty flavor, making for an interesting gluten-free alternative.
Egg Roll Wrappers (Gluten-Free): Some brands now offer gluten-free egg roll wrappers made from rice flour or other gluten-free starches. These can be used similarly to traditional Lumpia wrappers for both fried and fresh rolls.

Frequently
Asked Questions 1

What are lumpia wrappers made of?
Lumpia wrappers are typically made from a thin pastry dough. The main ingredients are usually wheat flour, water, and sometimes cornstarch. These ingredients are mixed to form a smooth batter, which is then cooked into very thin, delicate sheets. The result is a versatile wrapper that can be used for both sweet and savory fillings in various Asian cuisines.
What Filipino food is gluten-free?
Many traditional Filipino dishes are naturally gluten-free. Rice-based dishes like adobo, sinigang, and kare-kare are typically safe for those avoiding gluten. Filipino desserts made with rice flour, coconut, and tropical fruits are often gluten-free as well. However, it's important to be cautious of dishes that may contain soy sauce or other wheat-based ingredients, and to always verify ingredients when dining out.
Do spring roll wrappers contain gluten?
Spring roll wrappers can vary in their ingredients depending on the type and brand. Traditional Vietnamese rice paper wrappers are typically gluten-free, as they are made from rice flour. However, some wheat-based spring roll wrappers do contain gluten. It's important to check the ingredient list or look for specifically labeled gluten-free options if you have gluten sensitivities or celiac disease.
What is lumpia usually made of?
Lumpia is typically made with a thin wheat flour wrapper. The filling often consists of ground pork or beef, along with vegetables like carrots, onions, and cabbage. Seasonings such as garlic, soy sauce, and black pepper are commonly added for flavor. Once filled and rolled, lumpia is usually deep-fried until golden brown and crispy.
