What is Tolerase® G?

A new Approach for People with Gluten Sensitivity:
Explore the Science and Benefits of Tolerase® G.

Relief from Gluten Sensitivity

In the fight against gluten, there is a unique supplement that stands out: Little Helpers anti-gluten pills with 100% Tolerase® G.

This specific enzyme, Tolerase® G, a patented endopeptidase specific for proline, was developed by  Royal DSM  and has been scientifically proven to be effective in breaking down gluten residues ( 1) . Furthermore, research has shown that Aspergillus niger prolyl endoprotease (AN-PEP), an enzyme closely related to Tolerase® G, can break down gluten so effectively that it barely reaches the duodenum, potentially eliminating gluten toxicity ( 2) ( 3 ) .

On this page we explain why we are so enthusiastic about this supplement, supported by scientific research.

What is Gluten?

Gluten is a group of proteins found primarily in grains such as wheat, barley, and rye. These complex proteins give shape, strength, and texture to bread and other grain products. However, gluten is difficult to digest because it is rich in proline, a non-essential amino acid. This is why about 13% of the world’s population is sensitive to gluten in their diet (1).

How Tolerase® G Works

It is important to note that Tolerase G is designed to have optimal activity in the difficult conditions of the stomach. Its effectiveness on the digestion of gluten in the stomach and duodenum has been scientifically proven ( 1 ).

Studies have shown that a newly identified prolyl endoprotease derived from Aspergillus niger can effectively break down gluten proteins. This enzyme works optimally at a pH of 4–5, remains stable at pH 2, and is completely resistant to digestion by pepsin ( 2 ). Furthermore, research has shown that Aspergillus niger prolyl endoprotease (AN-PEP) accelerates the breakdown of gluten in the stomach so much that very little gluten reaches the duodenum ( 3 ). This suggests that co-administration of AN-PEP with a meal containing gluten could potentially eliminate gluten toxicity, allowing people to (occasionally) abandon their strict gluten-free diet ( 3 ).

Sweet and Sour Pork:Made with tender pork pieces instead of chicken, this dish can be easily adapted to be gluten-free by using cornstarch for coating and ensuring the sauce ingredients are gluten-free. It offers a similar flavor profile to the chicken version.
Sweet and Sour Shrimp:A seafood alternative featuring succulent shrimp in a gluten-free batter, fried until crispy and coated in sweet and sour sauce. This option provides a lighter protein source with a delicate flavor.
Sweet and Sour Cauliflower:A plant-based option using crispy, battered cauliflower florets as the main ingredient. This lower-calorie alternative offers a satisfying crunch and absorbs the sweet and sour flavors well.
Sweet and Sour Meatballs:Made with gluten-free breadcrumbs or almond flour, these meatballs (using ground beef, pork, or turkey) are a hearty alternative to chicken. They're typically baked or pan-fried and then tossed in the sweet and sour sauce for a comforting, protein-rich meal.

Frequently
Asked Questions 1

Does sweet and sour chicken contain gluten?
Sweet and sour chicken often contains gluten, but it depends on the specific recipe and preparation method. The batter used to coat the chicken typically includes wheat flour, which contains gluten. Additionally, the sweet and sour sauce may contain soy sauce or other gluten-containing ingredients. However, gluten-free versions can be made using alternative flours and sauces.
What is sweet and sour chicken breading made of?
Sweet and sour chicken breading is typically made of a mixture of flour, cornstarch, and seasonings. The flour provides structure while the cornstarch helps create a crispy texture when fried. Common seasonings may include salt, pepper, garlic powder, and sometimes paprika or other spices for added flavor. This dry mixture is used to coat chicken pieces before they are fried and then tossed in sweet and sour sauce.
Can celiacs eat sweet and sour sauce?
Celiacs need to be cautious with sweet and sour sauce. Many commercial sweet and sour sauces contain gluten, often from soy sauce or wheat-based thickeners. However, some brands offer gluten-free versions, and it's possible to make homemade sweet and sour sauce without gluten ingredients. Always check labels carefully or inquire about ingredients when eating out.
Is Chinese sweet sauce gluten free?
Chinese sweet sauce can vary in its ingredients and preparation. Many commercial versions may contain gluten, often from soy sauce or wheat-based thickeners. However, some varieties or homemade versions can be gluten-free if made with gluten-free ingredients. It's important to check labels or ask about ingredients if you have gluten sensitivities or celiac disease.
