Benefits of Tempura Batter

Lower oil absorption: When prepared correctly, tempura batter creates a light, crispy coating that absorbs less oil compared to other deep-frying methods.

Potential for vegetable intake: Tempura often includes vegetables, which can increase consumption of nutrient-rich foods.

Protein source: If the batter includes eggs, it provides some protein.

Gluten-free option: When made with rice flour or other gluten-free flours, it can be suitable for those with gluten sensitivities.

Lower calorie option: Compared to some other fried foods, tempura can be relatively lower in calories due to its light, crispy nature.

Versatility: The cooking method allows for a variety of ingredients to be used, potentially increasing diet diversity. However, it’s important to note that tempura is still a deep-fried food and should be consumed in moderation as part of a balanced diet. The health benefits are limited and largely depend on the ingredients used and cooking method.

What is Tolerase® G?

A new Approach for People with Gluten Sensitivity:
Explore the Science and Benefits of Tolerase® G.

Relief from Gluten Sensitivity

In the fight against gluten, there is a unique supplement that stands out: Little Helpers anti-gluten pills with 100% Tolerase® G.

This specific enzyme, Tolerase® G, a patented endopeptidase specific for proline, was developed by  Royal DSM  and has been scientifically proven to be effective in breaking down gluten residues ( 1) . Furthermore, research has shown that Aspergillus niger prolyl endoprotease (AN-PEP), an enzyme closely related to Tolerase® G, can break down gluten so effectively that it barely reaches the duodenum, potentially eliminating gluten toxicity ( 2) ( 3 ) .

On this page we explain why we are so enthusiastic about this supplement, supported by scientific research.

What is Gluten?

Gluten is a group of proteins found primarily in grains such as wheat, barley, and rye. These complex proteins give shape, strength, and texture to bread and other grain products. However, gluten is difficult to digest because it is rich in proline, a non-essential amino acid. This is why about 13% of the world’s population is sensitive to gluten in their diet (1).

How Tolerase® G Works

It is important to note that Tolerase G is designed to have optimal activity in the difficult conditions of the stomach. Its effectiveness on the digestion of gluten in the stomach and duodenum has been scientifically proven ( 1 ).

Studies have shown that a newly identified prolyl endoprotease derived from Aspergillus niger can effectively break down gluten proteins. This enzyme works optimally at a pH of 4–5, remains stable at pH 2, and is completely resistant to digestion by pepsin ( 2 ). Furthermore, research has shown that Aspergillus niger prolyl endoprotease (AN-PEP) accelerates the breakdown of gluten in the stomach so much that very little gluten reaches the duodenum ( 3 ). This suggests that co-administration of AN-PEP with a meal containing gluten could potentially eliminate gluten toxicity, allowing people to (occasionally) abandon their strict gluten-free diet ( 3 ).

Gluten Free Alternatives
Rice flour batter:A light and crispy alternative made from finely ground rice. It creates a delicate coating that's similar to traditional tempura and is naturally gluten-free.
Cornstarch batter:This batter produces a thin, crispy coating that's ideal for lighter foods. It's made from pure cornstarch and results in a golden, crunchy exterior.
Chickpea flour batter:Also known as gram flour or besan, this alternative offers a slightly nutty flavor and creates a crispy, golden coating. It's high in protein and fiber.
Potato starch batter:This creates an exceptionally light and crispy coating. Potato starch batter is nearly flavorless, allowing the taste of the food to shine through.
Gluten-free all-purpose flour blend:A mix of various gluten-free flours (such as rice flour, tapioca starch, and potato starch) that mimics the texture and behavior of wheat flour, creating a tempura-like batter suitable for those with celiac disease or gluten sensitivity.

Frequently
Asked Questions 1

Is all tempura batter gluten-free?
Not all tempura batter is gluten-free. Traditional tempura batter typically contains wheat flour, which contains gluten. However, there are gluten-free tempura batter recipes and mixes available that use alternative flours like rice flour or cornstarch. It's important for those with gluten sensitivities or celiac disease to check ingredients or ask about preparation methods when ordering tempura at restaurants.
Does tempura have gluten in it?
Tempura batter typically contains wheat flour, which contains gluten. However, it is possible to make gluten-free tempura using alternative flours such as rice flour or cornstarch. Traditional tempura served in most restaurants is likely to contain gluten unless specifically stated otherwise. If you have celiac disease or gluten sensitivity, it's best to ask about ingredients or opt for certified gluten-free options.
What is a gluten-free substitute for tempura mix?
A common gluten-free substitute for tempura mix is rice flour. You can also use a blend of rice flour and cornstarch for a crispy texture. Another option is to use a gluten-free all-purpose flour mix designed for baking and frying. For best results, add a leavening agent like baking powder to help achieve the light, airy texture typical of tempura.
Is tempura rice or wheat flour?
Tempura batter is typically made with wheat flour, not rice flour. The main ingredients in traditional tempura batter are wheat flour, water, and sometimes egg. Rice flour may occasionally be used as a substitute or addition, but it's not the standard. Classic Japanese tempura is known for its light, crispy texture, which is achieved primarily through the use of wheat flour.
