Is high gluten flour the same as bread flour?

No, high gluten flour and bread flour are not the same, albeit they do share some similarities. They are both wheat flours, however, bread flour contains between 12-14% gluten, while high gluten flour contains about 14-15% gluten. This higher gluten content makes bread made from high gluten flour chewier and helps it to rise more. It’s commonly used for certain types of bread such as bagels and pizza doughs that require a denser, more robust structure. On the other hand, bread flour’s slightly lower gluten content makes it ideal for general bread baking purposes.
